Tonight I got home from work and immediately started cooking. I've been wanting to cook every meal lately (that does not mean I have!) I think it is the fall season in the air (not really in phx, but in my head) and the hope of cooler days when I can eat soups oatmeal and sip hot cocoa. I also want to wear sweaters. Really bad. But that's beside the point.
I started cooking and didn't know what I was going to end up with since we didn't have too many ingredients.. Amazingly it was Super delicious and healthy!
My Made Up White Bean Chili.
First I put onion, green onion and cilantro in the food processor and made it really finely diced. Then I put a can of organic kidney beans, organic white northern beans, and a can of vegetable broth in the chili pot and simmered it up. I cut up some celery and added it to the pan with the onion medley. Both cooked for about 10 minutes separately and then I put them together. Add Cumin, Chili Powder, Red Pepper Flakes, Salt and Pepper and VOILA! Delicious chili in about a half hour.
I also made vegan chocolate chip cookies...

Mollie that looks really good! Come to Utah for colder weather! You should totally take a trip up for conference, you mom and lisa and all the family! That would be really fun and you could wear jeans and a sweatshirt and feel cozy at night! It has been getting cold at night :) K but I love you and I love Gret Gret, give her a kiss for me and post a video of the army crawling action :)
